About: Nachani Kurdai (नाचणी कुरडई) is a traditional Maharashtrian snack made from nachani / ragi (finger millet). It is prepared by cooking ragi flour into a thick paste, shaping it into spirals or strands, and sun-drying them. Once dried, they are deep-fried, becoming crispy and light. Known for being gluten-free, high in calcium and iron, and healthier than rice-based kurdai. Commonly eaten as a side dish with meals or as a tea-time snack, especially in rural Maharashtra. Also called: Ragi Kurdai Nachni Sandige (similar version in Karnataka)
Ingredients: Ragi Flour, Salt, Asafoetida, Oil, Edible, Sodium Bicarbonate (Papad Khar) Asafoetida may contain wheat.
